My pressure jumped around quite a bit. On the returnless fuel system the pressures seem to vary quite a bit and drop very rapid when off throttle. Put it on the dyno and have an air/fuel ratio done if you are concerned. Normally you will have drivability problems if there is a fuel management problem. That shooting to 60 psi sounds a little wierd, but it sounds RICH....much better than lean.
