You could use something like a relay to kill the circuit to the LEDs when you manually turn on the dome light.
I drew a cheesy picture. Red wires represent power wires that are already there. Blue wires represent power wires you add for the LEDs. You also need to add the relay, and you need to add the diode between the dome light and the manual dome light switch on the car's existing power wire to allow power to flow from the switch to the dome, but never from the dome to the switch.
The power you tap from the dome goes through a relay on the "normally closed" poles (make sure your relay has these poles, not all of them do), which will be connected together when the relay is *not* energized. The relay will be energized only by the manual switch, not by unlocking the door because of the diode. When the relay is energized, the power to the LEDs is cut off.
