Angry Won't Rev

Can anybody help? My truck all of a sudden won't rev above 3600 RPM! At 3600 it just stops climbing, but runs smooth as can be. It's like the throttle blade isn't opening all the way, but it's fully open. I replaced the fuel filter and nothing. Fuel pressure flutters very fast between 39 & 40 PSI when it quits reving. It will even do it in neutral, but will rev to 4000rpm. Computer gives no codes. It was running great 3 days ago.

What does it sound like when you rev it?

Does it make a popping sound like it's missing or just won't rev?

Sounds just fine. It sounds like the throttle is only open 1/2 way. The fuel pressure guage does fluctuate very rapidly between 39 & 40 lbs. I do have a MAF conversion. Could it be possible that the MAF voltage is not right? Is there any way to check it at WOT? Just won't rev. I ruled out valve springs because the heads are new, and I didn't have a hint of trouble a couple of days ago.
